Tiki Cocktails
Several
summers ago at Disney's Grand Californian Hotel,
I ordered a Mai Tai
at the pool bar.
It was delicious, of course, but the part that really impressed me,
were the little
pineapple bits frozen INSIDE the ice cubes.
What a wonderful, easy, and tasty
idea!
...You
should also consider freezing rings of
pineapple into a jello-ring mold,
to help keep a punchbowl cold.
I love the individual cubes as well.
Start
early, make alot of pineapple ice, you won't want to run out!
If
you can, keep your glasses in a freezer before you serve them.
You
do NOT need to stock a full bar. It's simple and more cost effective
to choose 2 or 3 tropical drinks, and allow guests to choose from those.
Make sure to provide at least one non-alcoholic option.
Keep
an array of pretty cut fruit and fanciful straws on hand,
to decorate
your drinks, whether or not they have alchohol !

Combine ingredients in a mixing glass with crushed ice.
|
| Monarchy Luau Punch 1 fresh pineapple 1/2 cup brandy 2 Tbl sugar 3 cups pineapple juice 1/2 gallon white wine 1 quart champagne Remove rind and core form pineapple; coarsely chop fruit. Combine pineapple, brandy and sugar; marinate 6 hours or overnight. Pour pineapple juice into a ring mold and freeze. Add wine to pineapple- brandy mixture; refrigerate 30 minutes. Add pineapple juice ring and champagne just before serving.
