Frozen
Watermelon Mousse Place watermelon in container of an electric blender, and process
until smooth. Reserve 2-1/4 cups puree, discarding any remaining
puree. Combine gelatin and 1/4 cup watermelon puree. Bring remaining
2 cups puree to a boil in a small saucepan. Remove from heat;
add gelatin mixture, and stir until gelatin dissolves. Stir in
sugar and lemon juice, and chill mixture until consistency of
unbeaten egg white. Fold whipped cream into chilled watermelon
mixture. Spoon into a lightly oiled 6-cup mold. Cover and freeze
8 hours or until firm; unmold onto serving plate. Yield: 8 to
10 servings. |
WATERMELON
CHICKEN SALAD Preparation: Remove rind from watermelon and cut flesh into 1- to 1 ½ inch cubes. Cover and refrigerate. Cook and drain noodles, set aside. Arrange 1 sliced chicken breast on a spiral on 3 oz. of noodles. Place 3/4 cup cubed watermelon and 1/3 cup sliced cucumbers beside chicken. Sprinkle with parsley sprigs. Garnish with bamboo shoots and serve with Sweet and Sour Ginger Dressing. SWEET AND SOUR GINGER DRESSING Preparation: Mix vinegar, soy sauce, and ginger root until well mixed; set aside. Combine soy and sesame oils in salad dressing shaker; gradually add vinegar mixture until blended. Shake well before serving. Florida Dept of Agriculture & Consumer Services |

WATERMELON PARTY GAMES Seed Count Fill a jar with watermelon seeds, and encourage guests to guess the number of seeds in the jar. Seed Spitting Lay a long piece of butcher paper on the ground. Guests stand at one end, and compete to spit their seeds the farthest. Mark each guests seed on the paper before the next guest spits. Watermelon Relay Can be played in the pool with a floating watermelon,
or rolled on dry land. Watermelon Eating Contest Slice dozens of pieces of watermelon, and weigh them so all contestants start with the same amount of watermelon. First guest to finish wins. Establish rules about how much "red" can be left on the rinds, or cut the rinds off beforehand. Watermelon Polo This is played in the deep end of a swimming pool. Divide the group into two teams. Throw a watermelon into the pool (it will float). Throw, pass, give, hand, dive, or toss the watermelon to other team members to try to get it past the “goal” of the other team. The team wins who is successful at getting the watermelon to sit on the ledge at the other side of the pool. This is hysterical and a very challenging game, recommended for adults. Watermelon Carving Contest If guests are adults, provide knives and carving tools for contestants to create the most creative watermelon display. Blindfold them for hilarious results. For kids, plastic knives might work, have them cut shapes into individual slices of melon.
